Coffee taste characteristics are dependent not only on the coffee's growing region, but also on genetic subspecies (varietals) and processing methods. On this processing part is where we are trying to work with the farmers very closely by spending weeks with them to arrive at a cupping profile where it should be. Several factors play important role in purchasing green bean. Market nature, season and transit time, and of course quality must all be taken into account. At the end, it must stand well on the cupping table.
